The softball ball comes in two sizes and two colors. Depending what age group you are coaching will determine size. For 10 and under leagues, most use the 11" ball as that gives the pitcher an opportunity to grip the ball. Also check to see if the league uses the regular softball or the "softee"/"Incrediball" version as this provides some added protection to the players. For all other age groups, the regulation size ball is the 12" ball. Most teams/leagues/tournaments use the yellow ball. Generally, tournaments supply the balls. In the case of league play or when you scrimmage other teams, you will need to provide the ball. Finally, most pitchers prefer the raised seam balls as this provides better grip for them to deliver the variety of pitches they throw.
You will find that different program levels have different "official balls". Generally, this is branded on the ball, from ASA to NCAA and so on. Again, before you invest in game balls, find out what the league is recommending. Also, if you are sponsoring a tournament, it would be wise to speak to the league president in your area (ASA v. PONY v. USSSA v. NSA v ...) to make sure the balls you are providing are what is recommended. When you sponsor a tournament, you are responsible for providing the games balls for all of the games.
